You have heard me speak of my mom’s incredible baking ability before so it is with much anticipation that I introduce my mom’s FAMOUS (Yes, they really are famous!) granola muffins.  She came up with this recipe entirely on her own and she has made them for as long as I can remember.  They have the winning combination as far as I am concerned. They are HEALTHY and DELICIOUS!

Oats are incredibly nutritious, just take a look! Half a cup of dry oats contains…

  • manganese: 191% of the RDI
  • phosphorus: 41% of the RDI
  • magnesium: 34% of the RDI
  • copper: 24% of the RDI
  • iron: 20% of the RDI
  • zinc: 20% of the RDI
  • folate: 11% of the RDI
  • B1: 39% of the RDI
  • B5: 10% of the RDI
  • calcium, potassium, vitamin B6 and vitamin B3 

 

This recipe is versatile.  It can be made as bars or muffins, it can be eaten for breakfast or as a snack, dessert, or energy bar!

 

Mom’s FAMOUS Granola Muffins

 

Ingredients

1/2 cup olive or coconut oil

1/2 cup unrefined sugar (or for sugar-free add one more banana and omit the sugar)

6 ounces non-GMO tofu

2 eggs

1 tsp. gluten-free vanilla extract

2 ripe mashed bananas

3/4 cup gluten-free flour mix

1 tsp. baking soda

1 tsp. baking powder

2 tsp. cinnamon

1/4 cup unsweetened coconut flakes

1/2 cup gluten-free and/or dairy-free chocolate chips

1/2 cup unsweetened cranberries

1/2 cup raisins or any dried fruit

1/4 cup chopped nuts

2 1/4 cups gluten-free oats

 

DIRECTIONS

1. Dump all the ingredients into a large mixing bowl and mix on low speed. (I love an easy recipe, don’t you?)

2. Pour into a greased 11×13 Pyrex baking dish or into a prepared muffin tin and bake in a preheated 350-degree oven for 25 minutes.

  1. Mmmm, I could definitely go for those, but I don’t eat any soy. Does it need a substitute or do you think I could omit it? I have no idea what the texture is; I am assuming not yogurt-ish?

    1. I think you could substitute cream cheese if you eat dairy or yogurt cheese…let me know if you try it with the substitutions and how it turns out!
