Gluten-Free Cherry Cobbler is the perfect Summertime treat to share with your friends and family. Oh, the smell when baking is amazing and oh, the taste of this simple cobbler is scrumptious! Using freshly picked cherries is the best but you can also substitute frozen organic cherries.
I just made this recipe yesterday and it was gone in a matter of minutes. That fact should give you the incentive to try this delectable treat! This is the BEST recipe and is also grain-free, dairy-free, sugar-free and Paleo, that’s a mouth full!
Gluten-Free Cherry Cobbler
Serves 8
Ingredients
1 cup almond flour
1 TBS. ground golden flaxseed
1/3 cup arrowroot flour
1 cup maple sugar or Swerve
1 TBS. baking powder
1/2 cup melted butter or ghee
2 large eggs
1 cup milk or almond milk
4 cup fresh or frozen cherries
DIRECTIONS
- Preheat the oven to 350 degrees.
- Place the butter or ghee in an 11×13 inch baking dish and melt in the oven. When the butter is melted remove from the oven.
- While the butter is melting, combine all the ingredients in a large mixing bowl EXCEPT the cherries. Mix on low speed until the ingredients are combined.
- Pour the batter on top of the melted butter making sure the batter reaches the edge of the baking dish. You do not need to mix the butter and the batter.
- Drop the cherries on top of the butter and batter. Bake for 1 hour or until the center is done.
