I LOVE Chicken Pot Pie! Don’t you?
The creamy deliciousness of homemade Chicken Pot Pie is Comfort food at its best. Up until now, I have not been able to replicate the homemade goodness of traditional chicken pot pie into a gluten-free chicken pot pie until now!
I am so excited to share with you the BEST Homemade Gluten-Free Chicken Pot Pie!
This recipe is gluten-free, sugar-free, grain-free, nut-free, low carb, and can be made dairy-free and Paleo.
The BEST Homemade Gluten Free Chicken Pot Pie
Serves 8
Ingredients
one recipe BEST Flaky Grain-Free Pie Crust
two recipes Gluten Free Cream of Chicken Soup
1 pound chicken tenders cooked, cooled, and cubed
1 cup of frozen organic mixed vegetables
1 small diced onion
DIRECTIONS.
- Make one recipe of BEST Flaky Grain-Free Pie Crust and press the crust into 8 mini pie pans. Cut out 5″ circular pie crust pieces for the top of the chicken pot pie. Refrigerate for an hour before filling and baking.
- Preheat the oven to 400 degrees.
- Make two recipes of Gluten-Free Cream of Chicken soup.
- Add the chopped chicken tenders, diced onion, and mixed vegetables into the cream of chicken soup and bring to a slow boil. Once it starts to bubble remove the soup from the heat immediately.
- Take your pie crusts from the refrigerator and fill the pie crusts up to just below the rim with the cream of chicken mixture.
- Place the pie tops on and crimp the edges together. Prick the top of the chicken pot pies with a fork.
- Eggwash the tops and bake for 15 to 20 minutes until the crust is golden brown.
