I LOVE Chicken Pot Pie!  Don’t you?

The creamy deliciousness of homemade Chicken Pot Pie is Comfort food at its best. Up until now, I have not been able to replicate the homemade goodness of traditional chicken pot pie into a gluten-free chicken pot pie until now!

I am so excited to share with you the BEST Homemade Gluten Free Chicken Pot Pie!

This recipe is gluten-free, sugar-free, grain-free, nut-free, low carb and can be made dairy-free and Paleo.

 

 

The BEST Homemade Gluten Free Chicken Pot Pie

 

Serves 8

 

Ingredients

one recipe BEST Flaky Grain-Free Pie Crust 

two recipes Gluten Free Cream of Chicken Soup

1 pound chicken tenders cooked, cooled and cubed

1 cup of frozen organic mixed vegetables

1 small diced onion

8-mini pie pans

 

DIRECTIONS.

  1. Make one recipe of BEST Flaky Grain-Free Pie Crust and press the crust into 8 mini pie pans. Cut out 5″ circular pie crust pieces for the top of the chicken pot pie. Refrigerate for an hour before filling and baking.
  2. Preheat the oven to 400 degrees.
  3. Make two recipes of Gluten-Free Cream of Chicken soup.
  4. Add the chopped chicken tenders, diced onion and mixed vegetables into the cream of chicken soup and bring to a slow boil.  Once it starts to bubble remove the soup from the heat immediately.
  5. Take your pie crusts from the refrigerator and fill the pie crusts up to just below the rim with the cream of chicken mixture.
  6. Place the pie tops on and crimp the edges together.  Prick the top of the chicken pot pies with a fork.
  7. Egg wash the tops and bake for 15 to 20 minutes until the crust is golden brown.
