This recipe for my Big Batch Raw Paleo Granola is scrumptious! Well, heavenly actually and the real kicker is that it is life-giving and healthy for you. I created this recipe after a visit to my naturopath, as a way to get in as many of the missing nutrients I needed in my diet. This recipe is Paleo, Raw, Vegetarian, Gluten-Free, Sugar-Free, and Dairy-Free!
My favorite way to eat this EASY and delicious breakfast is to have it on top of yogurt. However, I like to rotate the granola with my recipe for gluten-free berry clafoutis as an energy-building way to start the day.
In other words, this Nutrient-packed breakfast takes only minutes to make a huge batch and is jammed packed with nutritious ingredients. It stores well in the refrigerator for a month’s worth of breakfasts (depending on the size of your family).
Let’s get started…
Big Batch Raw Paleo Granola
Ingredients
1 cup coconut oil
1 Tsp. cinnamon
1 Tsp. pure stevia powder
2 TBS. gluten-free vanilla
1 cup pure maple syrup
6 cups walnuts
4 cups pecans
3/4 cup unsweetened shredded coconut
1/2 cup chia
1 1/2 cups raw shelled hemp seed
2 cups ground flaxseed
1/2 cup sesame seeds
1 1b. dried blueberries
*Get creative and substitute different kinds of nuts or different kinds of dried fruit. Substitute cocoa powder for the cinnamon for another variation.
DIRECTIONS
- In a large stockpot combine the first five ingredients and bring to a boil. Stir gently and remove from heat immediately after it boils.
- Dump in all other ingredients and stir with a large wooden spoon. (I told you this was easy!)
- Store in a large glass jar. (I use a giant Vlasic pickle jar from Costco to store the granola in.)
- Keep the Big Batch Raw Paleo Granola in the refrigerator or in a dark cool pantry.
Pour yourself a bowl and add milk or your favorite non-dairy substitute and ENJOY!
Hemp seeds are exceptionally nutritious and rich in healthy fats, protein, and various minerals. As a result, hemp seeds contain over 30% fat. They are exceptionally rich in two essential fatty acids, linoleic acid (omega-6) and alpha-linolenic acid (omega-3). The gamma-linolenic acid found in hemp seeds has also been linked to reduced inflammation, which may decrease your risk of inflammatory diseases!
