I think the fact that you let this coleslaw sit for at least an hour before serving makes it so good. That and the creamy part! The word creamy denotes that there should be cream in this recipe but there is not. Delicious creaminess comes from the mayo. I know that you are going to LOVE this recipe!!
This recipe is gluten-free, sugar-free, keto, nut-free, dairy-free, and paleo.
Creamy Keto Coleslaw
Serves 6
Ingredients
1/2 head purple or green cabbage thinly sliced (about 1 pound)
1 small red onion thinly sliced
1 carrot grated
3/4 cup mayonnaise or paleo mayonnaise
1/4 cup raw apple cider vinegar
2 TBS maple sugar 0r 2 TBS Swerve
2 tsp. sea salt
1/2 tsp. dried mustard
1/4 tsp. freshly cracked pepper
1/4 tsp. onion powder
1/4 tsp. ground coriander
DIRECTIONS
- Combine all ingredients in a glass or stainless steel bowl and mix well.
- Store covered in the refrigerator for at least an hour.

I love coleslaw but I don’t eat mayonnaise any more. Any ideas for swapping out? I keep thinking I should try an avocado instead but not sure. Thanks for sharing on Let’s Get Real Friday Link Party.
