Appetizers are a category of food that I truly and completely adore. They are usually served at restaurants and on holidays which makes them all the more special. I first tasted this delectable Creamy Roasted Artichoke Dip at just such a special holiday function. It has now become one of my go-to recipes, even my friends and family request that I bring it everywhere I go.
The artichoke is a delight to eat but what makes it even more enticing is that one large artichoke contains only 25 calories, no fat, 170 milligrams of potassium, and is a good source of vitamin C, folate, magnesium, and dietary fiber.
This easy-to-make dish is gluten-free, sugar-free, and nut-free!
Creamy Roasted Artichoke Dip
Serves 8
Ingredients
Topping
2 slices gluten-free bread (I use Udi’s bread)
2 TBS. freshly grated parmesan cheese
1 TBS. butter melted
Dip
1 large jar or 2 15 oz. cans of artichoke hearts
2 TBS. olive oil
salt
ground pepper
1 medium onion minced
2 medium garlic cloves minced
1 cup mayonnaise
8 oz. cream cheese
1/2 cup grated parmesan cheese
2 TBS. lemon juice
1 TBS fresh thyme
1 pinch of cayenne pepper
Directions
1. Combine all the ingredients for the topping in a small mixing bowl. Set aside.
2. Combine all ingredients for the dip in a large mixing bowl and mix on low.
3. Spread evenly in a square baking dish. Spread topping over the dip mixture.
4. Bake at 350 degrees for a half-hour.
5. Serve warm with tortilla chips or gluten-free crackers.
