I made these gluten-free Crockpot Parmesan Scalloped Potatoes for Easter this year and everyone raved. I chose to make this EASY recipe in a crockpot to free up oven space and I was so pleased with the result I have decided to continue to make this creamy dish this way from now on. An added bonus is that this recipe is also grain-free and sugar-free too!

Crockpot Parmesan Scalloped Potatoes
Serves 12
Ingredients
1/2 cup butter at room temperature
5 pounds organic white-skinned potatoes sliced thinly, peels on.
6 cups organic whipping cream
1 TBS. garlic powder or 4 minced garlic cloves
3 tsp. salt
1/2 tsp freshly ground pepper
1 TBS. dried parsley or 1/4 cup fresh chopped parsley
1 cup grated Parmesan cheese
DIRECTIONS
1. Turn your crockpot on high and let the butter melt.
2. Thinly slice potatoes and put them in the crockpot.
3. Add remaining ingredients and gently mix to combine.
4. Cook potatoes on high in the crockpot for 4 hours. Stirring again after two hours of cooking time. Make sure that the creamy mixture bubbles for at least a half-hour before serving.

I love the idea of using the crock pot for these! They would be great to make for company, so you can let them do their thing while you’re making other menu items.
