Fresh Berry Parfaits has to be one of my favorite breakfasts and it also makes a delicious dessert! Versatility and ease make this recipe a winner.
Do you know what else makes this recipe a treasure? It is incredibly healthy for you and if you have allergies it is easy to adapt. Can I add just one more quality I love about fresh berry parfaits? They look so charming!
Research has shown that berries are one of the healthiest foods on the planet. Fresh berries are extremely high in antioxidants which makes them a necessity when planning out a nutritious, healthy meal plan. Personally, I try to have a cup of berries every day. When fresh is not in season I purchase frozen organic berries.
OK…enough of my praises, on with the recipe!
Delicious Fresh Berry Parfaits
Serves 1
Ingredients
1 cup whole milk plain yogurt (allergy-friendly substitute: coconut yogurt)
1 cup granola (allergy-friendly substitute: grain-free granola)
1 cup fresh or frozen blueberries, raspberries, and blackberries
a pinch of stevia
1 tsp. gluten-free vanilla extract
DIRECTIONS
- Add a pinch of stevia and vanilla extract to your yogurt and stir.
- In parfait glasses layer 1/2 cup granola then 1/2 cup berries and finally 1/2 cup yogurt and repeat until you fill the cup. Top with a few berries and ENJOY!
