I always remember my friend Mari when I make this bread and that makes it even more special. Another reason I like to recipe so much is the almond flavor. It reminds me of the Swedish cakes and desserts I grew up on. This easy is easy to make so include the kids for an enjoyable activity. It also is an amazing addition to afternoon tea!
Gluten-Free Almond Poppy Seed Bread
Ingredients
3 cups gluten-free flour mix or paleo flour mix
2 1/2 cups sugar or maple sugar
3 TBS poppy seeds
1 1/2 tsp. baking powder
1 1/2 tsp. salt
1 1/2 tsp. gluten-free almond extract
1 1/2 tsp. gluten-free vanilla extract
1 1/4 cup avocado oil
1 1/2 cup almond milk
3 eggs
DIRECTIONS
- Preheat the oven to 350 degrees
- Combine all the ingredients into a large mixing bowl and beat at low speed until the batter is smooth.
- Pour the batter into two greased loaf pans.
- Bake for 1 hour and 15 minutes.

I have a question, does the flour mix use potato flour? (I’m allergic to potato sadly but it looks amazing!)
You can substitute cassava flour for potato flour! Hope this helps!
