I can see them loaded with fresh, delicious, organic apples! Here is a wonderfully healthy, scrumptious, and Gluten-Free Apple Salad that is sure to please your whole family.
Apples are one of the healthiest foods a person can eat. They are high in vitamin C and have high fiber content. They are also low in calories, have only a trace of sodium, and no fat or cholesterol. Make sure to eat the skin of the apple, it is loaded with polyphenols!
Crisp Gluten-Free Apple Salad
serves 8
Ingredients
1 tablespoon minced shallot
1 1/2 tablespoons champagne or white wine vinegar
1 tablespoon fresh lemon juice
2 tablespoon honey
1 teaspoon Dijon mustard
1 Dried Apricot unsweetened and unsulfured, finely chopped
4 tablespoons olive oil
1/4 teaspoon salt
freshly ground black pepper to taste
2 cups torn green leaf lettuce leaves
4 cups Romaine lettuce
1/4 cup crumbled goat or blue cheese
1/4 cup walnuts, coarsely chopped
1 ounce very thin slices prosciutto, torn
1 apple, cored and thinly sliced
