This Gluten-Free, dairy-free Blueberry Clafoutis is my favorite breakfast right now. The almond flour and the blueberries make this recipe a healthy and nutritious way to start the day. Clafoutis is a French dish that is basically a tart made of fruit, typically cherries, baked in a sweet batter. The problem for a person with allergies is how to make a batter that tastes great, is nutritious, and is also a similar consistency to the original. It took me a few tries but I think I got it!!

Gluten-Free Dairy-Free Blueberry Clafoutis
Serves 6 to 8
Ingredients
1 cup blueberries
3 large eggs
1 1/4 cup coconut milk
2 tsp vanilla extract
1/2 cup maple sugar
1/3 cup almond flour
2 TBS potato starch
2 tsp finely grated fresh ginger
1/4 tsp salt
Powdered Swerve powdered sugar for dusting
DIRECTIONS
- Preheat oven to 375 degrees.
- Grease baking dish.
- Lay all the blueberries at the bottom of the baking dish.
- In a large bowl whisk all the remaining ingredients together.
- Pour the batter evenly over the blueberries.
- Bake for 50 minutes, or until golden brown.
- Let cool slightly and then sprinkle with powdered swerve.
