This recipe for Gluten-Free French Cauliflower Soup is one of my favorites to make in the summer with fresh cauliflower from the garden! You can just as easily use frozen too. Another reason I just love this soup is that it is EASY which seems to be an ongoing trend in all my delicious “dump and go” recipes. Yet another reason this recipe is a winner is the rich, creamy taste…my whole family loves it. This smooth recipe is a great way to get vegetables into their diet without them being conscious of it!

Gluten-Free French Cauliflower Soup
Serves 8
Ingredients
1 large head cauliflower, heads only chopped into 2″ pieces
1 large onion diced
2 cloves garlic
2 wild ramps
6 cups organic chicken broth or bone broth
salt and pepper to taste
1 cup heavy cream
Toppings
fresh chopped chives
crumbled bacon
grated cheese
DIRECTIONS
- Place all ingredients into the slow cooker on high EXCEPT the cream and toppings.
- Cook for at least 5 hours in the slow cooker.
- Pour 4 cups at a time of the cauliflower mixture into a blender and puree with the cream.
- Return pureed cauliflower soup to the Crock-Pot and simmer.
- Serve hot with toppings.

I love cauliflower, but I tried a cauliflower soup several years ago and just didn’t like it. Maybe the cream would help. Might have to try it again. My favorite with cauliflower is cauliflower rice. http://www.lemoinefamilykitchen.com/2016/06/maple-bacon-french-toast-bake/
