This recipe freezes well and is not only gluten-free but sugar-free, keto, nut-free, vegetarian, and grain-free!
Gluten-Free French Pistou Soup
Serves 10
Ingredients
3/4 cup extra-virgin olive oil, divided
2 cups chopped onions
2 cups chopped leek
1 cup chopped celery
2 TBS chopped garlic
12 cups chicken or vegetable broth
1 15oz. fire-roasted red peppers
1 pound lentils or cannellini beans (soaked overnight)
1 cup packed fresh basil
3/4 cup grated Parmesan cheese (omit for Paleo diet)
1/2 cup fresh parsley
8 medium cloves garlic
1 tsp. salt
1/2 tsp. ground pepper
1 1/2 pounds Swiss chard or spinach
DIRECTIONS
- Turn on the crockpot to high and pour half the olive oil into the crockpot until hot.
- Add the onion, leek, celery, and chopped garlic, and saute until the onion is clear.
- Add the remaining ingredients and cook on high for six hours. Stir occasionally.
