My daughter hosted a tea party to congratulate her dear friend on getting her first teaching job. Everything was of course delicious but one dish stood out to me as I tasted the fare, admittedly, sneaking things off plates in the kitchen. The cookies. Oh, my oh my, where they melt in your mouth scrumptious! I am so excited to share the Gluten-Free Lavender Earl Grey Cookie Recipe with you here today!
This recipe is gluten-free, sugar-free, paleo, grain-free, and is amazingly easy to make!
Gluten-Free Lavender Earl Grey Cookie Recipe
Makes approximately 18 cookies
Ingredients
1 cup cassava flour
1 cup almond flour
1/4 cup tapioca flour
1 1/4 cups maple sugar
1 TBS. ground Earl Grey tea
1/2 tsp. ground lavender (culinary grade)
1/2 tsp. grain-free baking powder
1/2 tsp, sea salt
1/4 tsp. baking soda
1 cup room temperature grass-fed butter
1 large egg
2 tsp. gluten-free vanilla extract
DIRECTIONS
- Preheat the oven to 350 degrees and line the cookie sheets with parchment paper.
- Cream the butter, sugar, and vanilla in a medium-sized mixing bowl until it is light and fluffy.
- Grind the Earl Grey Tea and Lavender in a spice mill or coffee grinder.
- Add the dry ingredients and mix at low speed until incorporated.
- Use a cookie scoop to drop the cookie dough onto the parchment-lined baking sheets. Approximately 2 inches apart.
- Bake for 12 minutes, remove from the oven to cool for at least 20 minutes.
