Calling all lemon lovers!  I am so excited to share with you, our family’s recipe for gluten-free Luscious Lemon Bars.   These fly off the plate at my home and they will at yours too.  I enjoy the uplifting lemon flavor in these treasures and they go wonderfully with a cup of tea.   Mostly, I serve them as dessert.

There is a secret ingredient in this recipe that makes it especially delicious!  It is lemon essential oil!

Lemon essential oil has multiple benefits and uses. When added to water, Lemon provides a refreshing and healthy boost throughout the day. Lemon is frequently added to food to enhance the flavor of desserts and main dishes. Taken internally, Lemon provides cleansing and digestive benefits and supports healthy respiratory function.  When diffused, Lemon has an uplifting aroma.

 

 

Gluten-Free Luscious Lemon Bars

Makes 15

 

Ingredients

2 cups gluten-free flour mix

2 cups unrefined cane sugar

1 cup grass-fed butter or ghee

1/4 tsp. salt

4 eggs

1 tsp. baking powder

1/2 cup water

1/2 cup lemon juice

3 drops lemon essential oil

1 TBS. powdered sugar

 

DIRECTIONS

1. Preheat the oven to 350 degrees.

2. Combine all ingredients EXCEPT powdered sugar.  Gently mix.

3. Pour into 11×13 inch pan or 2 – 9-inch circular pans.

4. Bake for 20-25 minutes.

5.  Let cool.

6.  Sprinkle with powdered sugar and refrigerate.

 

*One caution is to make sure your brand of lemon essential oil is able to be used internally.
