Today, my Mother-in-law’s FAMOUS  gluten-free orange glazed sweet potatoes!

It is admittedly, July and I traditionally think of this as a Thanksgiving dish but in truth, I make it year-round like I did today on a hot Summer day. It is equally delicious no matter what time of year it is.  Did I happen to mention it is nutritious too?

I always double and sometimes triple this recipe as it is a real crowd pleaser, plus I love this recipe so much that I go back for seconds and thirds.  That may be the real issue behind the tripling of the recipe!

This recipe is gluten-free, nut-free, dairy-free, sugar-free, and Paleo and Keto depending on the sweetener you use in the recipe.

 

 

Gluten-Free Orange-Glazed Sweet Potatoes

Serves 4-6

 

INGREDIENTS

2 pounds sweet potatoes

2/3 cup unrefined cane sugar or maple sugar or swerve

1 TBS. arrowroot powder

1 tsp. pink Himalayan salt

1/2 tsp. grated orange peel

1 cup orange juice

2 TBS. organic grass-fed butter

 

DIRECTIONS

1. Preheat the oven to 400 degrees.

2. Peel and slice sweet potatoes and put the potatoes in an 11×13 Pyrex or stone casserole dish.

3. In a medium saucepan stir together all the ingredients EXCEPT the sweet potatoes.

4. Cook the ingredients in the saucepan on medium/high heat until the mixture boils.  Let boil for 1 minute remove from the heat and pour directly over the sweet potatoes in the casserole dish.

5. Bake for 1 hour, basting occasionally.
