Food can give us a powerful sense of identity. For me, Swedish food, yes even the good and the bad (can you say lutefisk) grounds me. I am a descendant of Swedish immigrants and I draw close to my past through food traditions that have been passed down through my great-grandmother Hulda. My grandma’s Swedish coffee cake, potatiskorv, and Gluten-Free Scandinavian Almond Cake. Well, except that now the recipes have been deliciously adapted to be gluten-free and in most cases Paleo as well.
This recipe is gluten-free, sugar-free, dairy-free, grain-free, and Paleo!
Gluten-Free Scandinavian Almond Cake
Serves 12
Ingredients
1 1/4 c maple sugar
1 large egg
1 1/2 tsp. gluten-free pure almond extract
2/3 cup unsweetened almond milk
1/2 c cassava flour
1/2 c almond flour
1/4 c potato starch flour
1/2 tsp. gluten-free baking powder
1 stick melted grass-fed butter or ghee
1/8 c sliced almonds or powdered sugar (optional)
DIRECTIONS
- Butter and flour the traditional Swedish Almond Cake Pan or 8×8 square cake pan.
- Preheat the oven to 350 degrees.
- Mix in a large mixing bowl, on low speed the maple sugar, egg, almond extract, and almond milk.
- Slowly add the flour, baking powder, and melted butter to the previous mixture.
- Pour into the pan and bake for 40 – 45 minutes. Edges must be golden brown.
- Cool in the pan before removing.
- Sprinkle with sliced almonds or powdered sugar.
