I love grilling! The smoky flavor is great and the cleanup is even better. Gluten-Free Shish Kabobs are a winner for everyone. They are easy and taste AMAZING! Add a few side dishes and you are all set for a picnic. As a mother of 6, my recipes need to taste delicious, easy, and nutritious. These delicious lip-smacking gluten-free Shish Kabobs meet all of these qualifications.
This recipe is gluten-free, grain-free, dairy-free, sugar-free, Paleo, and Keto!
The BEST Gluten Free Shish Kabobs
Serves 8
Ingredients
1/2 cup coconut amino’s
1/4 cup lemon juice
1 TBS. Dijon mustard
1 clove garlic crushed
1 tsp. freshly ground pepper
2 tsp. salt
2 lbs. cubed grass-fed, pasture-raised chicken, lamb, or beef
12-16 mushrooms
2 red peppers
2 green peppers
2 large onions
*8 wooden skewers
DIRECTIONS
- Combine the first 7 ingredients in a large Ziploc freezer bag. Seal and shake well. Add the meat, seal the bag, and marinate for 6 to 8 hours in the refrigerator.
- Chop vegetables into 2-inch pieces.
- After marinating the meat, drain the marinade into a bowl and save for grilling.
- Thread your vegetables and cubed marinated meat onto a wooden or metal skewer.
- Heat your grill and lightly oil the grate.
- Place your shish kabobs onto the pre-heated grill, brush with the remaining marinade. Turning frequently. Cook for approximately 15 minutes.
