Get ready for a delicious meal, this recipe for Gluten-Free Shrimp Scampi is to die for!

Yes, it really is!

I am trying to make an effort to have fish twice a week at my home.  The plain fact is that fish is good for you.  The main beneficial nutrient appears to be omega-3 fatty acids. Omega-3 fatty acids are a type of unsaturated fatty acid that may reduce inflammation throughout the body. Inflammation in the body can damage your blood vessels and lead to heart disease.

I am all about trying to lower inflammation.  Eating fish is just one way to do just that.

 

 

Gluten-Free Shrimp Scampi

Serves 8

 

Ingredients 

1/2 cup  organic olive oil

1/2 cup lemon juice

1/4 cup chopped parsley or basil

2 TBS. minced garlic

1/2 tsp. freshly ground black pepper

1/2 tsp. red pepper flakes

3 pounds fresh or frozen shrimp

 

DIRECTIONS

  1. Mix all the ingredients in a large stainless steel bowl.  Let the shrimp marinate for at least 30 minutes in the refrigerator.
  2. Heat a large cast-iron skillet on medium-high heat for 5 minutes prior to cooking the shrimp.
  3. Pour 1/2 cup of marinade liquid into the large cast-iron skillet.   Spoon in the shrimp.  Let the liquid and shrimp bubble.  The shrimp is done when it turns opaque.

*I like to add some fresh vegetables to the cast iron skillet when I am cooking the shrimp.  My favorite is chopped fresh tomato and peppers.  You could really add whatever fresh vegetable sounds good to you.
