This is an old family recipe from my Mom’s side of the family The Peterson’s.  My family came from Sweden in the late 1800s and settled near Lindsborg Kansas.  I  can’t verify that this delectable Swedish Apple Cake was made on the “homeplace” but I can verify it has been lovingly mixed by many a proud Swedish descendant over the years.

When I learned that I had Celiac Disease, I began to make this cake gluten-free.  Still tastes absolutely amazing!

 

Gluten-Free Swedish Apple Cake

Serves 8

 

Ingredients 

1 1/2 cups gluten-free flour

3 tsp. baking powder

1/2 sugar or maple sugar

1 tsp. gluten-free vanilla extract

1/2 cup grass-fed butter (room temperature) or ghee

2 eggs

5 apples cored, peeled, and chopped

 

DIRECTIONS

  1. Preheat the oven to 350 degrees.
  2. Combine all the ingredients and gently mix.
  3. butter a large pie plate or a springform pan.
  4. Bake for 20 to 30  minutes.   Eat warm with fresh whipped cream, vanilla ice cream or traditional vanilla sauce. (see recipe below)

 

Vanilla Sauce

Ingredients 

1 vanilla bean

1/2 cup heavy whipping cream

3/4 cup whole milk

2 egg yolks

2 TBS. sugar or maple sugar

2 tsp. potato starch flour or cornstarch

3/4 cup whipping cream

 

DIRECTIONS

  1. Split the vanilla bean and place it in a stainless steel pot with 1/2 cup whipping cream and whole milk.  Stir constantly. Bring to a boil, remove from the heat, and let sit for 15 minutes.
  2. Whisk the egg yolks, sugar, and potato flour into the vanilla bean mixture.
  3. Return the pot to medium heat to simmer until thickened.  DO NOT let it boil or everything will curdle.
  4. In a separate mixing bowl, whip the remaining 3/4 of whipping cream until peaks form.
  5. Once the vanilla mixture is cool, gently, little by little, incorporate the whipped cream together with the vanilla mixture.
  6. Top the Swedish Apple Cake with this heavenly cream!
