Well, what can I say?  What makes this recipe for Gluten-Free Swedish Meatballs so delicious is the real cream.  I just don’t know anyone who doesn’t love this recipe!  Serve this with mashed potatoes and oh, my mouth is watering just thinking about it!

This recipe feeds a crowd, so feel free to half it or freeze half the meatballs.  Thankfully, it is also a wonderful recipe to get the kids involved with.  They will enjoy making the meatballs and remember many hands make light work.  (Just make sure to wash their hands before and after they roll the meatballs.)

You can make this recipe for any dinner but make sure to make it on St. Lucia Day and on Swedish Christmas.  It will make a delicious tradition you won’t want to miss.

 

Gluten-Free Swedish Meatballs

Serves 8

 

Ingredients

3 lbs. lean ground beef

1 1/2 lbs. ground pork

1 lb. ground turkey

2 large eggs

2  cups gluten-free bread crumbs or oatmeal

2 cups finely chopped onion

2 TBS. olive oil

2 TBS. butter

6 TBS. gluten-free flour

2 cups gluten-free beef broth

2 cups gluten-free chicken broth

2 cups heavy whipping cream

1 tsp. ground nutmeg

1/8 tsp. ground cloves

1 tsp. salt

pepper to taste

1/2 cup fresh minced parsley

 

DIRECTIONS

  1. Combine the first set of ingredients (for the meatballs) in an extra-large bowl or a large soup pot.  Incorporate all ingredients, mix well, and roll into 2-inch size meatballs.  Set the finished meatballs on a parchment-lined cookie sheet.  (At this point you can freeze the meatballs for later.  Freeze the meatballs first on the cookie sheets and then after they are thoroughly frozen you can keep them in a freezer bag until you are ready to use.)
  2. In an extra-large, cast iron frying pan melt the butter and olive oil.  On medium heat add as many meatballs as you are able to fry at one time but do not crowd them.  Turn frequently to make sure they are brown on all sides. Remove the meatballs when done and transfer to a paper towel-lined cookie sheet to drain.  Continue frying all the meatballs.
  3. Turn off the heat in the frying pan and add the gluten-free flour a little at a time into the warm cooking oils, make sure to whisk in the flour.
  4. Heat under the frying pan and turn to medium.  Add the beef and chicken broths to the flour mixture in the frying pan and add the liquid ingredients.  Slowly and whisk.  Add the nutmeg, cloves, salt, and pepper, and return the meatballs to the pan.  Cook, stirring occasionally for about 15 minutes until the meatballs are cooked thoroughly and the gravy is bubbling.
  5. Sprinkle the parsley over the platter of meatballs and gravy.  Serve hot with mashed potatoes and enjoy!
