My absolutely favorite gluten-free sweet cornbread recipe and a staple in our gluten-free house!  I have also been known to adapt this recipe a bit by adding bacon drippings to the bottom of the cast iron pan I usually make this recipe in,  I have also added sharp cheddar as well as jalapenos for a bit of a bite.  Make these into muffins for a large gathering or potluck!

 

TIP: Make sure your flour is fresh.  A good way to make sure this happens is to store the flour (properly sealed) in the freezer between uses.

Gluten-Free Sweet Cornbread Recipe

 

serves 6

 

Ingredients

1 stick softened butter or ghee

2/3 cup unrefined cane sugar or maple sugar 

2 eggs

1 cup gluten-free flour mix

3 tsp. baking powder

1/4 tsp. salt

1 cup milk or almond milk

1 cup corn flour

 

DIRECTIONS

1. Combine all ingredients and mix but don’t overmix.  The batter can be slightly lumpy.

2. Pour into muffin tins or a greased cast-iron skillet.

3. Bake in a 400-degree oven for 25 minutes.
