I love tomato soup and I always have!  One step better is Gluten-Free Tomato Soup paired with an ooey-gooey grilled cheese sandwich on gluten-free Udi’s bread of course!

For a long time, I had to give Tomato Soup up because most brands of soup are not gluten-free.  So, I waited and waited until I could find a good recipe for tomato soup, and soon enough I found one.  Yippee!

We have been using this recipe for at least 10 years.  I like it for a few reasons.

1. It tastes great!

2. It is very economical to make.

3. I always have the ingredients on hand.

 

The BEST Gluten-Free Tomato Soup

Serves 4

 

Ingredients

1 – 6 ounce can of organic tomato paste

2 1/2 tsp. garlic powder

2 tsp. sugar or 1 tsp. honey

1/2 tsp. salt

24 oz. milk (fill the tomato paste can up 4 times), coconut milk or water

 

DIRECTIONS

1. Combine all ingredients and whisk together while cold.

2. It is very important to heat it on low, very slowly so it will not curdle!

3. Top with freshly grated Parmesan Cheese.
