I love French cooking for one and only one reason…the taste! Today, I have converted a recipe for traditional French Cassoulet and made it Grain-Free Chicken, Sausage, and Bacon Cassoulet! My whole family loved it and there were seconds all around.
Traditional French Cassoulet is made with duck which is hard to find and expensive, I prefer chicken, hence the change.
I hope you will ENJOY this recipe as much as we did!
Slow Cooker Grain Free Chicken Cassoulet
Serves 10
Ingredients
2 cups gluten-free chicken broth
1/2 cup white wine or white wine vinegar
1 15oz. can of diced tomatoes
1 medium onion diced
1 large carrot chopped
3 TBS chives
4 garlic cloves
2 cans drained Cannellini beans
2 TBS. dried parsley
1 tsp. dried rosemary
1 tsp. dried sage
salt and pepper to taste
2 cups of chopped chicken
1 1/2 pounds of Italian sausage
5 slices crumbled bacon
*For topping
2 cups crushed potato chips
3/4 cup Parmigiano-Reggiano cheese
DIRECTIONS
- Make the topping and set aside.
- Add the remaining ingredients to a slow cooker and cook on high for 6 to 8 hours.
- Ladle cassoulet into bowls and top with the cheese and potato chip mixture.
