When I experiment in the kitchen it takes me a while to get a recipe right. Working with gluten-free and often grain-free flours can be tricky! That said, my Mom is an excellent baker and nailed this recipe in one try…to say I was a bit jealous might be an understatement. We don’t need to go into my character deficiencies right now 🙂
These versatile rolls have passed the taste test with non-gluten-free people with flying colors. Everyone who has tasted this recipe has loved them!
In order to make these tender rolls, you will need an extra-large muffin tin. I like these Silicone Texas Muffin Pans!
I present to you my Mom’s Grain-Free Tapioca Rolls…Enjoy!
Mom’s Grain-Free Tapioca Rolls
Makes 6 rolls
Ingredients
2 cups tapioca flour or potato starch flour
1 tsp. baking soda
1 1/2 tsp. sea salt
2 eggs
1/4 cup whole milk or coconut milk
1/4 cup melted grass-fed butter or ghee
1/4 cup shredded Kerry Gold Dubliner Cheese
DIRECTIONS
1. Mix all the dry ingredients first in a large mixing bowl. Add the liquid ingredients and mix on low speed until combined.
2. Sprinkle tapioca flour on a clean counter. Scrape the dough into the flour and kneed. Add more tapioca flour if the dough is wet.
3. Divide the dough and fill each section of the muffin tin evenly.
4. Bake in a preheated 400-degree oven for 15 minutes.
