The quest for sugar-free, berry jam is a difficult one! That’s why I am so excited to share with you How To Make Honey Berry Jam!
One of my daughters is actually allergic to cane sugar. Yep, you heard me right! Honey, stevia, coconut crystals and maple syrup she is ok with. We are grateful for those other options.
This wonderful jam is sweetened with raw honey. It is delicious and economical, therefore making it a win…win!
How To Make Honey Berry Jam
Ingredients
1 quart (4 cups) organic fresh or frozen mixed berries (Make sure you include blueberries as they are high in natural pectin.)
2/3 cup raw honey
1/4 cup fresh lemon juice
TIPS:
-Use stainless steel pans when working with a fruit of any kind.
-Have your sterilized canning jars, lids and rings ready before you start.
-Prepare your hot water canner with water boiling.
DIRECTIONS
1. Combine all ingredients into a large pot. Bring the fruit mixture to a boil.
2. Reduce heat, making sure the fruit mixture is still boiling. Stir consistently until the fruit thickens. This should take around 15 minutes. The time has varied for me though. When there is a thin sticky layer of jam on your wooden spoon it is done!
3. Pour the jam into clean hot canning jars. Place in a hot water canner for 10 minutes.
