I am continually on the quest for family-friendly Paleo recipes that taste great! This is my own creation and it took a little while to get it right. I am excited to present to you Paleo Bacon Broccoli Frittata. It’s a win in my book because who doesn’t like bacon? Kids and adults alike love it! The other ingredient that makes this dish so delectable is the caramelized onions. It lends a sweet mellow flavor to the dish that really complements the zing of the cayenne.
This gluten-free recipe also happens to be grain-free, sugar-free, dairy-free, nut-free, and Paleo.
Paleo Bacon Broccoli Frittata
Serves 8
Ingredients
14 large eggs
1 large red onion sliced
1 clove garlic
1 lb. crumbled fried bacon
4 cups chopped broccoli
2 TBS olive or grapeseed oil
1/4 cup chicken broth
1/8 tsp. ground cayenne pepper
salt and pepper to taste
DIRECTIONS
- Preheat oven to 375 degrees.
- Saute the sliced onions and garlic in 2 TBS oil. Cook until the onions are clear and starting to brown.
- At the same time, in another frying pan cook the bacon. Let cool and then crumble
- Crack eggs and whisk for a minute then add the chicken broth, red pepper flakes, and salt and pepper. Incorporate the spices and chicken broth.
- Add the remaining ingredients to the egg mixture and gently combine.
- Pour into a well-seasoned 17″ cast iron skillet.
- Bake for 20 minutes.
Family-Friendly Tip: Put a bowl of freshly grated Parmesan cheese on the table for those who can safely eat dairy products.
