For the record, I adore pie! Anyone else? I am so excited to share with you the long-awaited Paleo Pecan Pie recipe! It sure was fun to test and try new renditions of the traditional Pecan Pie. I hope you will enjoy this recipe as much as my family does! ENJOY!
This recipe is gluten-free, Paleo, grain-free, dairy-free, and sugar-free!
Best Paleo Pecan Pie
Serves 8
Ingredients
3/4 cup chopped pecans
3/4 cup raw honey
3 large eggs
¼ cup ghee (melted)
1 tsp gluten-free vanilla extract
1/4 cup arrowroot flour
½ tsp salt
1 pie shell (paleo pie crust recipe below)
24 pecan halves (to decorate the top of the pie)
DIRECTION
- Prepare the recipe for the Cassava Flour Pie Crust and refrigerate for one hour.
- Preheat the oven to 375 degrees.
- Butter a 9″ deep-dish pie plate with ghee and press the rolled-out pie crust into the pie plate.
- In a large bowl, add the date paste and maple syrup and mix on low speed. One ingredient at a time, add the eggs, melted ghee, gluten-free vanilla extract, and salt. Mix until the batter is well incorporated.
- Spread the chopped pecans on the bottom of the pie and then pour the batter over the pecans.
- Place the pie in the oven and bake for 30 minutes or until the crust is light brown and the filling has set. (If the crust is getting too dark, cover the crust with strips of tinfoil.)
- After 20 minutes in the oven, arrange the pecan halves around the perimeter and center of the pie. Make any design you like!
Cassava Flour Pie Crust
Ingredients
2 ¼ cups cassava flour
1/4 tsp salt
¾ cup cold butter or cold ghee
8 Tbsp ice-cold water
DIRECTIONS
- Whisk the salt and the cassava flour in a mixing bowl. Add butter and using a pastry cutter, cut the cassava flour and butter until the largest pieces of butter resemble oatmeal.
- Add the ice water and mix on low speed until the dough holds together.
- Place dough in the refrigerator for one hour.
