Here is a recipe for Paleo Pumpkin Breakfast Cookies, these are a great way to start your day! I like to keep these in the freezer for those days when you need something quick for breakfast that is healthy and nutritious. These breakfast cookies are also wonderfully delicious paired with a cup of coffee. I also like them with my afternoon tea. These healthy cookies are filling and taste great all the while giving you boy the nutrients that it needs to function.
What makes this recipe so special? I think a combination of three things. The pumpkin, the vanilla bean paste, and the maple sugar! This tasty cookie does not have to be eaten just for breakfast, it would make a great after school snack for your kids, just add milk. (or almond milk)
This easy recipe is gluten-free, Paleo, sugar-free, vegan, and dairy-free and yes, it still tastes AMAZING!
Paleo Pumpkin Breakfast Cookies
Makes 20 cookies
Ingredients
1/4 cup raw shelled hemp seed
1/4 cup coconut flour
1/2 cup almond butter
1/2 cup ghee or butter
1 cup maple sugar
1 cup pumpkin puree
3 large eggs or 3 TBS. ground flax seeds plus 3 TBS. water
1 tsp. cinnamon
1 tsp. gluten-free vanilla bean paste
1 tsp. salt
1 tsp. baking soda
3/4 cup unsweetened coconut flakes
1/2 cup chopped walnuts
1/2 cup raisins or dried currants
1/4 cup chia seeds
1/4 cup chopped pepitas
1/4 cup chopped sunflower seeds
DIRECTIONS
- Preheat the oven to 350 degrees.
- In a large mixing bowl add all the ingredients and mix on low speed until all the ingredients are gently incorporated.
- On a parchment-lined cookie sheet drop the batter onto the cookie sheet using a 1/4 cup measure.
- Bake for 20 minutes until a fork comes out clean.
