Around three o’clock in the afternoon, you will find some of my family gathered around the farmhouse table for tea time, and this recipe for Paleo Shortbread Cookies is one of our favorites to have with herbal tea. I love that these cookies taste great and are healthy all at the same time. Even my son who is not on a gluten-free diet loves these cookies.

Paleo Shortbread Cookies
Makes 2 dozen
Ingredients
1 cup almond flour
1 cup cassava flour
1 cup potato starch flour
1/4 cup arrowroot flour
1/2 cup maple sugar
1/2 tsp. baking soda
1 tsp. salt
1/2 cup softened grass-fed butter, ghee, or palm shortening
1 large egg
2 TBS. gluten-free vanilla extract
2 tsp. lemon juice.
optional: 1/2 cup organic cane sugar to dip cookies in.
DIRECTIONS
- Preheat the oven to 350 degrees.
- Cream butter and sugar in a large mixing bowl.
- Add the remainder of the ingredients and mix until the dough forms a crumbly ball. (If the ball is a little too crumbly add a TBS. of water.)
- Scoop a tablespoon size of dough and roll it into a ball. Roll the cookie dough ball into the sugar and then flatten with a fork or fingertips on a parchment-lined or stone cookie sheet. (I like the stone cookie sheets the best!)
- Bake for 9 minutes.
*If you are in a hurry, you can dump the cookie dough into a greased 11×13 Pyrex baking dish and make them into shortbread bars.
