Hands down the hardest part of food allergies are holidays and birthdays!  I have made some disgusting birthday cakes in my time trying to accommodate my children’s allergies and Celiac Disease.  I am so happy to present you with this recipe for a great-tasting and good-textured Paleo Vanilla Birthday Cake!  There is a chocolate option too!!

This cake is gluten-free, grain-free, sugar-free, dairy-free, and Paleo too!

Paleo Vanilla Birthday Cake

 

Makes a 2-layer circular cake

 

Ingredients 

2/3 cup softened butter, ghee, or palm shortening

1/2 cup arrowroot flour

3 cups almond flour

1 cup maple sugar

1 Tsp. salt

1 Tsp. baking soda

6 large eggs

1 TBS. gluten-free vanilla extract

1 Tsp. lemon juice

 

*chocolate option Add 2/3 cup cocoa powder and reduce the amount of almond flour to 2 1/4 cups.

 

DIRECTIONS 

  1. Preheat the oven to 325 degrees.
  2. Grease and flour two 6-inch round cake pans.
  3. Add all the ingredients into a large bowl (set aside) EXCEPT the eggs.
  4. Separate the eggs and beat the egg whites until peaks form. Put egg yolks into the other bowl of ingredients.
  5. Mix the “other” bowl on medium speed until the ingredients are well incorporated.
  6. Gently and slowly fold in the whipped egg whites using a large rubber spatula, into the other bowl.
  7. Pour half of the batter into the round cake pans and bake for 35 to 40 minutes.

  3. Can I use tapioca starch in place of arrow root?

    1. Hi Bekhy, I would stick to arrowroot or corn starch if you can tolerate corn. Thanks for the question!

  4. If I’m using coconut crystals instead of maple sugar, should I use a different amount? Would I need to alter anything else about the recipe?

    1. Coconut sugar is great to use. The only thing it will affect is the color of the cake. If it is a chocolate cake it will be better and cannot tell the difference. If it is vanilla, the cake will be brown.

  5. Can you use maple syrup instead of maple sugar?

    1. Hi Cori,
      The consistency of the cake would change so you need to use maple sugar for it to turn out. I get mine on amazon prime. Hope this helps!

  10. can you subsitute date sugar or coconut sugar for the maple syrup

      You absolutely can substitute date or coconut sugar but the color wont look like a vanilla cake. It will still taste amazing through!
