For me, as the mother of 6 children, my crockpot is like having a servant waiting for me. I just put the ingredients in the morning, cover with its lid and turn the slow cooker on, and voila, at dinner time I have a meal that tastes great and I have done very little work. This recipe for Slow Cooker Vegetable Quiche is both gluten-free, grain-free, and sugar-free!
Everyone in my family loves this recipe even the picky eaters. I like to pair this delectable quiche with roasted rosemary potatoes. YUM! Another, benefit to this EASY recipe is that it is vegetarian and you can put in whatever vegetables your family desires. Since I have a flock of chickens this really is a wonderfully inexpensive recipe too!
Slow Cooker Vegetable Quiche
Serves 8
Ingredients
2 TBS grass-fed butter
2 cloves roasted garlic
2 TBS. arrowroot powder
10 eggs
1 cup half and half
1 cup whole milk
3 cups chopped vegetables (I like broccoli)
1/2 tsp. salt
1/4 tsp. nutmeg
2 TBS. finely chopped tarragon
1 cup grated cheese (use your favorite, mine is gruyere)
1 cup grated Parmigiano-Reggiano cheese
DIRECTIONS
- Turn the slow cooker on high and melt the butter and roasted garlic together.
- In a large bowl mix the eggs with a whisk and add the remaining ingredients. Pour the quiche mixture into the crockpot.
- Cook covered on high for 2 hours.
- Cut into slices or spoon out.
