I am excited to share with you the SIMPLE way to make Kombucha Tea!  This recipe is healthy, nutritious, and delicious and I know you will enjoy making this drink a part of your healthy living routine.  It is still hard for me to believe that something this tasty is actually good for you too.

In my area live culture organic Kombucha is $4 a bottle!  That said,  it is worth the time it takes to make this healthy and delicious drink.   An added bonus is that it is EASY to produce and very little effort is invested in making this probiotic-rich drink!

Kombucha is a fermented, lightly effervescent sweetened black or green tea. It is a delicious drink made with tea, sugar, bacteria, and yeast.  This amazing tea is made by adding the colony (Scoby) to sugar and tea and allowing the mix to ferment. The resulting liquid contains vinegar, B vitamins, and a number of other healthy chemical compounds.  Kombucha is an essential element in living a healthy lifestyle.

On a personal note, I have had several Autoimmune Diseases.  I drink Kombucha Tea weekly if not daily and it has had a tremendous benefit on my overall health.  I am unable to tolerate probiotic supplements and am allergic to green cabbage so that rules out eating fermented sauerkraut and purchasing probiotics in pill form.  Kombucha has been my answer and for the record, it tastes delicious, unlike the aforementioned probiotic sources.

 

The Simple Way To Make Kombucha Tea

Makes 1 quart

 

Ingredients

organic live culture Kombucha Scoby

4 cups purified water

2 TBS. loose leaf black or green tea (NOT herbal tea)

1/4 cup granulated organic sugar

1/4 cup Kombucha Tea with live active cultures (brewed from a previous batch or from your purchased Scoby)

 

DIRECTIONS

  1. Drop the tea and sugar into the bottom of a large glass pitcher.  Let the tea steep for at least 3 minutes.  Strain the tea.
  2. Pour the tea mixture into an extra-large canning jar or any extra-large glass jar. (I use a former giant glass pickle jar.)
  3. Allow the tea to cool to room temperature.
  4. Add the brewed Kombucha Tea and the Scoby into the jar.
  5. Cover the tea mixture with cheesecloth and put a rubber band around the lid to keep it secure.
  6. Let the tea ferment into Kombucha for 7 days.  Taste after 7 days and if you feel it is too sweet keep fermenting a few more days.
  7. After the fermentation process is done.  Gently lift out the mother Scoby and place 1/4 cup into the pitcher to start a new batch.  Pour the remaining Kombucha Tea into bottles or glasses to drink.

 

Secondary Fermentation

Secondary fermentation is an option to consider to make your Kombucha Tea fizzier and allow you to add more flavors.  The secondary fermentation is where all the fun comes in!

 

Ingredients

fermented Kombucha Tea

1/4 cup 100% fruit juice

*optional spices of your choice

 

DIRECTIONS

  1. Pour the Kombucha Tea into flip-top glass bottles.
  2. Add 100% fruit juice (add optional spices too) to the bottles of tea.  Leave 1 inch of headspace.
  3. Ferment for 3 days at room temperature.
  4. Open the flavored Kombucha Tea over the sink.
  5. Pour over ice for a refreshing and healthy beverage!
